Suzanne’s Strawberry, Cointreau & Chocolate Meringue Slice

Ingredients (Serves 6 to 8)


  1. Line a large loaf tin with cling film.
  2. Melt chocolate together with 2 tablespoons of the cream and beat to form a smooth ganache. Set aside.
  3. Lightly mix meringue into remaining cream.
  4. Mix the strawberries, Cointreau and Suzanne’s Strawberry, Balsamic and Mint Dressing.
  5. Place a third of the meringue mix in tin and smooth lightly and then place half the strawberry mix over. Swirl chocolate ganache into remaining meringue mix and place half over to form next layer.
  6. Top with remaining strawberries and finish with the chocolate meringue mixture. Smooth lightly, cover with cling film and freeze until firm Cut in slices from frozen, and decorate with strawberries and a dusting of cocoa to serve.
